Chapter 1Skills Studio · Thu, Jan 14

Knife skills

Every cut has a job. Pieces that are the same size cook in the same time, so nothing burns while the rest is still raw. Here's each cut we teach, and why it's worth learning.

The claw grip
Fingertips tucked under, knuckles guiding the blade. We teach it first because it keeps your fingers safe at any speed.
Dice
Even cubes, large, medium or small. Onions, potatoes and peppers cook evenly when every piece matches.
Brunoise
A tiny 3 mm dice. It melts into sauces and makes a sharp-looking garnish.
Julienne
Thin matchsticks. They cook in seconds in a stir-fry and add crunch to a salad.
Chiffonade
Leafy herbs rolled up and sliced into ribbons. A clean cut bruises less, so basil stays green.
Mince
Garlic, shallots and herbs chopped as fine as they go, so their flavor spreads through the whole dish.

Practice drill: one onion, three ways: dice, slice and mince. Show your Head Chef, then get your stamp.

Chapter 2Chef Lab · Tue, Jan 19  ·  Dough skills · Thu, Jan 21

Fresh pasta

The recipe · serves 2

  • 200 g 00 flour
  • 2 large eggs
  • 1 pinch fine salt
  • 1 tsp olive oil, optional
  • Semolina, for dusting

How to start, step by step

  1. Make the well. Pile the flour on a clean board and push a wide crater into the middle. Crack the eggs into it and add the salt.
  2. Bring it together. Beat the eggs with a fork, then pull in flour from the inside walls a little at a time. When it turns shaggy, switch to your hands and a bench scraper.
  3. Knead for 8 to 10 minutes. Push the dough away with the heel of your hand, fold it back and turn. It's ready when it's smooth and springs back when you poke it.
  4. Rest for 30 minutes, wrapped, at room temperature.
  5. Roll and cut. Roll it thin enough to see your hand through, dust with semolina, fold the sheet and slice 6 mm ribbons of fettuccine. Cook 2 to 3 minutes in well-salted boiling water.

Why start with a well?

The flour walls hold the eggs in place while you add flour slowly. You decide how much flour the dough takes, so it never ends up too wet or too dry.

What kneading does

It builds gluten, the stretchy network that gives pasta its bite and lets it roll thin without tearing. Resting relaxes that gluten so the dough rolls out instead of shrinking back.

Why 00 flour?

"00" is Italy's finest grind, soft as powder. It soaks up the egg evenly and makes a silky dough that rolls paper-thin. All-purpose works in a pinch; the pasta just comes out chewier and a little coarse.

Sauces

The pan sauce, in four moves

  1. Sear. Brown the meat or vegetables and leave the browned bits, the fond, in the pan.
  2. Deglaze. Pour in stock and scrape. The fond dissolves, and that's your flavor.
  3. Reduce. Simmer until it coats the back of a spoon.
  4. Finish. Off the heat, swirl in cold butter for a glossy, silky sauce.

Why save pasta water? Its starch helps cheese and fat stay mixed, which is how cacio e pepe turns creamy with no cream at all.

Pizza dough

Four ingredients · 4 pizzas

  • 500 g bread flour or 00 flour
  • 325 g water (65% hydration)
  • 10 g salt
  • 3 g instant yeast

Why a slow, cold rise? A day or more in the fridge gives the yeast time to build flavor and big, airy bubbles in the crust.

Mixer or hands? The dough hook on low speed does the kneading for you. Either way, it's ready when a stretched piece gets thin enough to let light through: the windowpane test.

USC's test kitchen, where students cook like chefs and eat like critics.

Chopped SC is USC's premier cooking club, for students who love food, whether you've never held a chef's knife or you already cook for your whole floor.

We cook twice a week: Tuesdays in Chef Lab and Thursdays in Skills Studio, where we sharpen technique. Twice a month on Saturdays, we eat our way across LA's restaurants, logging and ranking every stop together on the Beli app, and talk about what made each plate work.

The club was founded by Evelyn Jones, a USC Leventhal School of Accounting student who spent 12 years in hospitality before USC. She's bringing what she learned in restaurants to a kitchen full of Trojans.
